Ridge gourd is called as beerakaya in Telugu, peerkangai in Tamil, torai in hindi, hirekayi in Kannada and peechinga in Malayalam. It is also known as Chinese okra and sponge gourd.
No need to peel all the green skin, you can leave it behind. Wash and cut into strips and then chop it roughly. In the same kadai, add the chopped ridge gourd, oil and fry for few minutes. - It's of Peerkangai/ Ridge Gourd.
- You need of Oil.
- Prepare of Mustard seeds.
- It's of Urad Dal.
- It's of Small size Onion chopped.
- Prepare of Curry leaves.
- Prepare of Dry Red Chilli Broken.
- It's of Turmeric powder.
- It's of Sambar powder.
- Prepare of Garlic pods roughly chopped.
- It's of Salt-as per taste.

- Prepare of Grated Coconut(optional).

Peerkangai Poriyal/Ridge Gourd Fry step by step
- Wash and peel off the skin of Ridge Gourd. Cut into small pieces..
- In a kadai, add oil. Once oil gets heat, add mustard seeds and urad dal. Fry it..
- Add onions, curry leaves and dry red chilli. Saute till onions becomes translucent..
- Add turmeric powder, ridge gourd, garlic, salt and sambar powder. Saute well..
- Add little water. Cover with a lid. Don't add more water. Because ridge gourd will get cooked quickly. Add grated coconut and mix well..
- Transfer to a bowl. Now it's ready to serve. Serve as a Sidedish for your lunch..
Wash and clean the peerkangai - ridge gourd. Peel the skin with a vegetable peeler. Cut the peeled ridge gourd into small pieces. Add in the finely chopped shallots (small onions) and fry till the shallots are soft and starting to brown. Ridge gourd is called as Peerkangai in Tamil, Beerakai in Telugu and Torai in Hindi.
