1. You need 500 gm of Ridge gourd/Janhi.
2. You need 1 of Potato.
3. Prepare 1 of Onion.
4. It's 1 of tomato.
5. It's 1 tbsp of cumin seeds.
6. Prepare 3 tbsp of mustard seeds.
7. You need 1 of garlic.
8. It's 2 of red chillies.
9. You need 3 of green chillies.
10. It's 1 tbsp of turmeric powder.
11. It's 1 tsp of panchphodan.
12. Prepare as needed of oil.
13. Prepare To taste of salt.

Janhi Rai instructions

1. Fry the ridge gourd in a pan till it's golden brown and keep aside.
2. Grind the red chillies, mustard seeds and cumin seeds into a fine paste. This is called besara in oriya.
3. Heat some oil in a pan and add the panchphodan into it. Once it crackles add the onions and tomatoes and fry till it's soft and mushy.
4. Add the green chillies, turmeric powder, salt and mix well. Add the diced potatoes and let it cook for few minutes.
5. Once the potatoes are cooked add the besara masala and mix well. Add the fried ridge gourd into this and mix well.
6. Serve this with hot rice.
